Position Title: Dietary Manager

POSITION SUMMARY
Candidates requirements: Certified Dietary Management (CDM).
Three to Five consecutive years in supervision of a food service operation in a hospital and/or other institutional food service.
Duties includes but not limited to:
Maintenance of health and sanitation conditions per state and county regulation and record keeping/ documentation of all required forms and logs.
To provide direct supervision and guidance to all dietary staff, training, evaluation, work schedule and maintenance of their records.
Food ordering, inventory and record keeping.
Menu planning, using standardize recipe for the four weeks cycle menu.
Other duties as assigned by Administration.
Salary Range
$33.
50- $48.
50 / Hour DOE

CATEGORIES OF DUTIES
Provides direct supervision and guidance to all dietary services staff.
Develops, plans and sees to the proper preparation of all patient meals.
Responsible for all regularly scheduled meals and assures the quality thereof.
Follows the posted four-week cycle menu.
Makes changes, in writing, only as needed, and keeps a proper menu filing system.
Works with Dietitian on standardizes recipes for the four-week cycle menu, with direct supervision to cooks for recipe corrections.
Ensures staff adheres to patient profile cards for likes/dislikes and responds to any problems.
Interviews and makes recommendations in the hiring and termination of dietary staff.
Trains and directly supervises dietary staff.
Meets with dietary staff to discuss food services operations.
Provides dietary staff employee evaluations as required by Administration.
Prepares the work schedule for dietary staff and keeps work schedule posted in a conspicuous place in the kitchen.
Orders food and related supplies and maintains a related inventory.
Receives food and supply deliveries, and checks for accuracy and quality.
Records all orders and incoming shipments and forwards all related documents to Administration.
Inventories perishable foods daily, frozen foods weekly, or more as appropriate, dry goods monthly, of more as appropriate, and rotates stock for early consumption of food in the date order received.
Supervises the maintenance of health and sanitation conditions per state and county regulations.
Acts as backup to cooks and other dietary personnel.
Meets regularly with the Consultant Dietitian regarding menu planning, patient food needs, health and sanitation regulations and any other functions in the operation of food service.
Attends regular meetings with nursing staff and with Administration.
Other duties as assigned by Administration.
EDUCATION/EXPERIENCE
A completed Dietetic Services Supervisor (DSS) course with adhered to requirements as set forth by the American Dietetic Association.
Three (3) to five (5) consecutive years in the supervision of a hospital and/or other institutional food service operation.
A current negative TB test as provided by a physician.
